SoC is System on a Chip - (http://en.wikipedia.org/wiki/System_on_a_chip) in this case it's produced by Broadcom and actually I think the most difficult thing would be getting your hands on one. The only way that RPi managed to put in such a small (10,000 units) order was because one of the founders works for them...

Normally the soldering done is China is not of a very good standard. If you take about your iPhone, iPod, iPad etc and have a look you can see.
